I wasn't one who enjoyed meatloaf that much. I would always eat it but it was never anything that I would want to request. It just wasn't one of those foods that sounded good to me, and it actually was one that made me kind of scared of what was going to be the result of dinner and if I would need to eat something later because I didn't get full.
That time has passed for me now and I have even requested meatloaf for my birthday, and other special events in my and my families life! Ever since my wife started doing this recipe I have actually wanted to have this at least once a week and would be happy with more (not that it happens, but I would be fine if it does).
Also, I like to have my wife make extra sauce to put on, so I would try it and decide how much meatloaf to sauce ratio you would like yourself!
Meatloaf
- 3 Eggs
- 2/3 C Milk
- ½ C Bread Crumbs
- 1 C Oatmeal
- ½ C Grated Carrot
- ½ C Finely Chopped Onion
- 1 C Shredded Cheese
- 1 Tbsp Italian Seasoning
- 1 tsp Salt
- ½ tsp Pepper
- 2 lbs Lean Ground Beef
- 1 lbs Mild Italian Sausage
- 1 C Ketchup
- 1 C Packed Brown Sugar
- 2 tsp Mustard
- ¼ C Maple Syrup
Preheat the oven to 350 degrees F.
In a large bowl, beat the eggs. Add milk, bread crumbs, and oatmeal. Stir in carrots, onions, cheese, and seasonings. Add beef and sausage and mix well. In a shallow baking dish, shape beef mixture into the shape you want or bake in a bread pan. Bake for 45 minutes, until meat is cooked through.
While baking combine topping ingredients.
After 45 minutes, spoon half of the topping over the meatloaf. Return to the oven and continue baking for an additional 30 minutes. Remove from oven and let stand for 10 minutes.
Pour remaining sauce on top of meatloaf if desired.
